Chapli Kabab Burgers (Naseem)

Minced mutton or beef 750 gm
Garlic paste 1 tbsp
Ginger paste 1 tbsp
Onions, chopped 3
Tomato, chopped 1
Green chilies, chopped 3-4
Egg, beaten 1
Oil or clarified butter 1 cup
Chapli kabab spice mix 1 packet

For Assembling:
Bread rolls, toasted 4
Lettuce leaves few
Tomatoes, sliced 2
Onion, sliced 1
Tomato chutney to serve

In minced meat, add chapli kabab spice mix, onions, green chilies, ginger and garlic paste, tomato and egg. Mix well and knead to make smooth dough. Leave it aside for half an hour. Then with wet hands, make thin, flat and round kababs. Heat oil or clarified butter in a frying pan and fry the kababs. Toast the bread rolls and put the patties in them and top with lettuce, tomato and onion. Drizzle with chutney and put the roll top. Serve immediately with tomato chutney.


Chocolate Cupcakes

Flour 3/4 cup
Cocoa powder 1/2 cup
Baking powder 3/4 tsp
Baking soda 1/2 tsp
Salt 1/4 tsp
Eggs 2
Caster sugar 1/2 cup
Brown sugar 1/2 cup
Oil 1/3 cup
Vanilla essence 2 tsp
Buttermilk 1/2 cup

For Chocolate Buttercream Frosting:
Unsalted butter 1 cup
Icing sugar 3 1/2 cups
Cocoa powder 1/2 cup
Cream or milk 3 tbsp
Salt 1/8 tsp
Vanilla essence 2 tsp
Sprinkles to decorate

Method of Frosting:
Beat the butter. Add icing sugar, cocoa powder, cream or milk, salt, and vanilla essence. Add 1/4 cup more icing sugar if frosting is too thin or another Tablespoon of cream if frosting is too thick.

Method of Cupcakes:
Mix the flour, cocoa powder, baking powder, baking soda and salt. Beat the eggs, add in caster sugar, brown sugar, oil and vanilla together until combined. Pour the wet ingredients into the dry ingredients. Then the buttermilk. Stir until just combined; do not overmix. The batter will be thin. Pour or spoon the batter into the liners. Fill only halfway to avoid spilling over the sides or sinking.
Bake at 180 degrees C for 18-21 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool completely before frosting.
Frost with the chocolate buttercream and top with sprinkles.
